The basics

What applies from 2026

Since 1 January 2026 a single framework of mandatory training has applied to the staff of food businesses (Ministerial Decision 110581/2025, Government Gazette B’ 2161/06.05.2025). Every food business must train all staff who handle food, in line with Regulation (EC) 852/2004.

KEK KEPETH, as a certified Lifelong Learning Centre, delivers the basic 8-hour programme. It is for people working in:

Production & processing

workshops, patisseries, bakeries

Food service

restaurants, cafés, catering, mass catering

Retail & distribution

food shops, warehouses, transport

Also: it also covers cleaning staff in food-handling areas. People holding a university or technological institute degree (AEI/TEI, or a recognised equivalent) that proves adequate training in food hygiene are exempt.
